Meadowsweet Herb

Spring Water

Proceedure: Boil one cup of eac herb in 40 cups of water for one hour. Add one cup Barley Malt and one cup Honey. Strain and let cool to blood-warm (i.e. less than 70 degrees F). Add one oz. good yeast and let sit 24 hours. Add three drops of spring rain. Strain again, and bottle lightly. Tighten caps when quieting and pack in sand in a cool place until use.

Midsummer Wine

Oak leaves (one gallon)

Primrose flowers (one handful)

Golden pipes (one handful)

Special water: Morning Dew

Proceedure: Put fresh, green oak leaves in a large basin along with the 2 other herbs, fresh if possible. Pour 10 cups boiling water over the lot, cover with cloth and leave for 12 hours. In a large cooking crock, add six cups of honey to 10 cups water, bring to a boil until its all dissolved, then add strained oak/herb mixture. Add dew. Cool till bloodwarm and add one oz. good yeast. Cover, leave to ferment 2 weeks. Carefully ladle out into bottles, pack in sand and cork lightly. Tighten caps when fermentation quiets.

( Chamomile may be substituted for Golden pipes, and Red rose buds for Primrose if necessary)!

Samhain Absinthe

Apple Cider (3 gallons fresh)

Wormwood (1 large handful)

Pumpkin Blossoms (1 handful)

Special Water: Deep Well Water

Preparation: In wood (preferably in oaken barrel), steep dried wormwood and pumpkin blossoms (melon blossoms may be substituted) in apple cider with one pinch yeast, for one week before adding one cup well water and bottling. Tighten caps and pack in sand until use. Also add one whole clove to each bottle made.

Midwinter Mulsa

Juniper berried ( 1 handful)

Wintergreen (2 handfuls)

Elder Flowers (3 handfuls)

Special Water: Fallen snow.

Preperation: Boil all three herbs together in three gallons of water for one hour. Strain into cask and add 4 cups of honey or white sugar. Cool till blood warm, and float two tbs. good yeast spread on both sides of a piece of toast on surface, for two days. Carefully ladle into bottles for future use, and pack in sand. Also add three raisins to each bottle.
